Blueberry Salsa Salad

Ingredients:

Directions:

  1. Peel& section orange, then cut sections into small pieces, place in a large bowl.
  2. Stir in blueberries, apples, onion,cilantro.
  3. In a small bowl whisk vinegar, apple juice, oil, sugar, salt.
  4. Pour dressing over blueberry mixture, stir gently to coat.
  5. Let stand 10 minutes.
  6. Arrange lettuce on salad plates (6).
  7. Spoon blueberry mixture over greens, top each with cottage cheese.
  8. Sprinkle with fresh ground pepper if desired.
  9. Evenly spoon dressing over salads.
