Blackberry Jam Cake With Caramel Frosting

Ingredients:

  • 3 cups cake flour
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp allspice
  • 2 sticks butter
  • 1 cup buttermilk
  • 6 eggs
  • 3/4 cup firmly packed brown sugar
  • 1/2 cup milk
  • 1 tbsp butter

Directions:

  1. Stir together flour, salt and spices.
  2. Cream butter and sugar together well then add in the sifted flour mix and blend well.
  3. Stir the soda into the buttermilk and add into the mixture and stir again.
  4. Add eggs one at a time mixing well after each then add the jam and mix in thoroughly.
  5. Bake in three greased and floured cake pans for 30 minutes.
  6. When cool frost in between layers and sides and top of cake.
  7. To make frosting boil brown sugar, sugar and milk until syrup forms a soft ball in cold water then add butter and cool to lukewarm.
  8. Beat until thick and creamy.
