Ingredients:

  • 3 large black bananas
  • 1 cup sugar
  • 3 tsp. baking soda
  • dash salt
  • 2 eggs
  • 1/4 cup cooking oil
  • 1 1/2 cup flour
  • 1/2 cup buttermilk

Directions:

  1. Line two loaf pans with tin foil and heat oven to 275 F.
  2. In a large mixing bowl mash the bananas with the sugar and then mix with the salt and soda. Blend in the eggs, then, in order, the oil, flour and buttermilk.
  3. Pour batter into loaf pans and bake for about 2 1/2 hours or until a tooth pick inserted comes out clean.
