Ingredients:

Directions:

  1. Chop beef into bite sized chunks. Sautee beef in pan to caramelize the exterior.
  2. Chop vegetables. saute onion, carrot, celery and garlic for 5 minutes. add mushrooms and saute until soft, about 5 more minutes.
  3. Add 1 tsp dried thyme to vegetables.
  4. Add tomatoes and broth to pot. bring to a boil.
  5. Reduce heat to low and add barley.
  6. Simmer for 45 minutes until barley is cooked and tender. You may need to add 1 or 2 cups of water.
  7. Add peas and green beans during the last 10 minutes of cooking.
