Ingredients:

Directions:

  1. Soak the Black Eyes in water overnight ( 2 cups of dry yields 4 cups ).
  2. Next day add 1 tsp salt and GENTLY boil for about 30 minutes.
  3. Dice the bacon and fry until crisp. Remove from pan.
  4. In the hot bacon fat, cook the onion, celery and carrot until thoroughly heated.
  5. Add the Black Eyes, liquid, BBQ sauce and mustard.
  6. Gently mix.
  7. Simmer for 15 minutes, adding more liquid if needed.
  8. Just before serving, stir in the green pepper and crushed potato chips.
  9. Serve topped with the bacon.
