Baked Pecan Oatmeal

Ingredients:

  • 1/4 cup oil
  • 1/2 cup brown sugar
  • 1 egg
  • 1 1/2 cups oatmeal
  • 1/2 tbsp baking powder
  • 1/2 cup skim milk
  • 1/4 tsp nutmeg
  • 1/2 tsp cinnamon

Directions:

  1. Preheat oven to 350 degrees.
  2. Combine oil, sugar, egg, and pecans in a medium bowl. Add oatmeal, baking powder and milk and stir until blended.
  3. Pour into a lightly-greased 8x8 baking dish. Sprinkle with nutmeg and cinnamon.
  4. Bake at 350 degrees for 30 minutes. Cut into squares and serve hot or cold with milk and/or fruit.
