Ingredients:

  • 1/4 cup applesauce
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 3/4 cup flour
  • 1 cup oatmeal
  • 1 1/2 tsp baking powder
  • 1/4 cup skim milk
  • 1/4 tsp vanilla
  • 1/4 cup pecans

Directions:

  1. ?Preheat the oven to 375°.
  2. ?Use an electric mixer to cream together the applesauce and sugars; add the egg whites one at a time and beat until well blended.
  3. ?Combine the flour, oatmeal, cinnamon and baking powder in a bowl. Alternating with the milk, add the dry ingredients to the batter by hand, a little a time, stirring to blend. Stir in the vanilla / almond extract.
  4. ?Drop by teaspoons or tablespoons onto ungreased baking sheets and bake until lightly browned, 12 to 15 minutes. Cool for about 2 minutes on the sheets before using a spatula to transfer the cookies to a rack to finish cooling
