Ingredients:

  • 4 bagels, plain , multigrain, etc. (fruit ones aren'tsp as good)
  • 8 eggs
  • 8 cheese slices
  • cooking spray

Directions:

  1. Line shallow baking sheet with foil and spray with cooking spray.
  2. Preheat oven to 350 F.
  3. Slice bagels in half and cut out centers to produce holes about 1 1/2 inches in diameter.
  4. Butter each bagel half and place buttered side down on prepared baking sheet.
  5. Crack one egg into each bagel hole.
  6. Top each egg with salt and pepper to taste.
  7. Bake until eggs are set (I like them runny, my family likes them firm)
  8. Top each egg-bagel with a cheese slice and return to oven to melt cheese.
  9. Serve hot.
