Atkin Induction Friendly Crustless Quiche

Ingredients:

Directions:

  1. Heat oven to 350 and butter your deep pie pan or your muffin tins.
  2. Cook bacon until crisp, drain and coarsely chop.
  3. Use one tbsp of drippings to saute onions for 5 minutes until soft but not brown.
  4. Combine eggs, cream, spinach, cheese, salt and pepper.
  5. Stir in bacon and onion.
  6. Pour mixture into prepared pan.
  7. Bake 1 hour 15 minutes (takes about 1 hour in muffin tins).
