Acorn Squash Stuffed With Apple Couscous

Ingredients:

Directions:

  1. Place couscous in a small mixing bowl.
  2. Set aside.
  3. Bring apple juice to a boil in a small saucepan and pour over thecouscous. Cover and set aside until the juice is absorbed,about 15 minutes.
  4. Stir in the fruit, apple juice concentrate,cardamom and maple syrup.
  5. Set aside.
  6. Steam squash halves until tender, about 15 minutes.
  7. Drain and place on a bakingsheet.
  8. Preheat oven to 350 F degrees.
  9. Fill squash halves with the couscous mixture and bake for 20 minutes.
  10. Top with pecans and serve.
  11. (Notes-you can bake the squash halves until just tender also).
