Zucchini Breakfast Skillet

Ingredients:

  • 1 large green pepper
  • 2 small zucchini
  • 2 tbsp olive oil
  • 1 medium onion
  • 2 garlic cloves
  • 6 eggs
  • 2 tbsp bacon bits
  • salt and pepper

Directions:

  1. Set your broiler on high.
  2. Stem and seed pepper.
  3. Chop pepper and set aside.
  4. Dice zucchini. Set aside.
  5. Heat oil in a 12 cast iron skillet.
  6. Peel and chop onion.
  7. Add onion, garlic, bell pepper and zucchini to skillet.
  8. Cook until crisp tender about 2-4 minutes, stirring.
  9. Beat eggs until foamy.
  10. Add cheeses to eggs.
  11. Shake skillet and pour eggs into skillet.
  12. Stir to spread veggies out equally.
  13. Sprinkle bacon on top.
  14. Season with salt and pepper.
  15. Broil until golden and eggs are set and cheeses are melted.
  16. You can put this in a baking dish and bake at 325°F for about 30 minutes. Check to see if eggs are set.
