Ingredients:

  1. Combine bran cereal, oat bran, wheat bran and oats in a large bowl. Pour in boiling water and stir until moistened.
  2. Set aside for 15 minutes.
  3. Combine whole wheat flour, sugar substitute, baking sida, cinnamon, and salt in a bowl.
  4. Mash out lumps in bran mixture. Stir in buttermilk applesauce, egg substitute and oil until smooth.
  5. Stir in flour mixture and stir until smooth. Batter will be thick and using an electric mixture makes it easier.
  6. The batter can keep in your refrigerator for up to 3 weeks so you can bake muffins as you need them or bake them all at once. The muffins freeze well too.
  7. Pour into paper lined muffin pan.
  8. Bake until puffed and golden brown, about 25-30 minutes. Cool muffins 3 minutes.
