Yummy Applesauce Bran Muffins

YUMMY nutritionally rich bran muffins with a sweet apple hint. My mom sent me this recipe because she's always harping on me about increasing my fiber. I finally made them and SHHHH I LOVE THEM! Don't tell her!
Ingredients:
1 1/2 cups all-bran cereal
1 cup oat bran
3/4 cup wheat bran
1/2 cup old fashioned oats (not instant)
2 1/2 cups boiling water
2 cups whole wheat flour
1/2 splenda sugar substitute
2 tablespoons baking soda
1 teaspoon ground cinnamon
1 teaspoon salt
2 cups fat-free buttermilk
3/4 cup unsweetened applesauce
1/2 cup egg substitute
1/8 cup canola oil (can use 1/4 c canola and no flax oil)
1/8 cup canola oil
flax seed (i use these generously in mine)
raisins
mashed banana
Directions:
1. Combine bran cereal, oat bran, wheat bran and oats in a large bowl. Pour in boiling water and stir until moistened.
2. Set aside for 15 minutes.
3. Combine whole wheat flour, sugar substitute, baking sida, cinnamon, and salt in a bowl.
4. Mash out lumps in bran mixture. Stir in buttermilk applesauce, egg substitute and oil until smooth.
5. Stir in flour mixture and stir until smooth. Batter will be thick and using an electric mixture makes it easier.
6. The batter can keep in your refrigerator for up to 3 weeks so you can bake muffins as you need them or bake them all at once. The muffins freeze well too.
7. Pour into paper lined muffin pan.
8. Bake until puffed and golden brown, about 25-30 minutes. Cool muffins 3 minutes.
