Tomato Bread Pan Am Tomaquet

Ingredients:

  • 4 slices of french bread , big slices. you can use panera's french miche.
  • 1 tbsp olive oil
  • 1/2 tsp salt .

Directions:

  1. Slice the tomatoes in halves.
  2. Use a pyramid steel grater to purée the tomatoes: grate the cut face of the tomato onto the coarse surface of the grater until the skin of the tomato touches the surface of the grater.
  3. Pour purée into a bowl.
  4. Mix the olive oil and salt into the purée.
  5. Toast the slices of bread.
  6. Pour the purée into each toast and serve.
