This dish is a great Spanish breakfast that is tasty, easy and healthy. It uses fresh tomatoes, bread, olive oil and salt. Spaniards call it many names: pan payes, pan tumaca, pan tomate. It is the bacon and eggs of Spain. Ingredients:
2 ripe tomatoes |
4 slices of french bread, big slices. you can use panera's french miche. |
1 tbsp olive oil |
1/2 tsp salt. |
Directions:
1. Slice the tomatoes in halves. 2. Use a pyramid steel grater to purée the tomatoes: grate the cut face of the tomato onto the coarse surface of the grater until the skin of the tomato touches the surface of the grater. 3. Pour purée into a bowl. 4. Mix the olive oil and salt into the purée. 5. Toast the slices of bread. 6. Pour the purée into each toast and serve. |
