Tia's Crustless Spinach Quiche

Ingredients:

Directions:

  1. Preheat oven to 350°F.
  2. Lightly spray a large pie pan or quiche dish with Pam.
  3. In a large skillet over medium-high heat spray with Pam.
  4. Add onions, garlic and cook stirring occasionally, until onions are soft.
  5. Stir in mushrooms and spinach (if fresh, cover and allow to steam).
  6. Add tomato's near the end and cook slightly.
  7. In a large bowl, combine eggs, cheese and the rest of ingredients; stir well.
  8. Add spinach mixture and stir to blend.
  9. Scoop into prepared pan and bake in preheated oven until eggs have set, approximately 30 minutes.
  10. Let cool slightly to set before serving.
