Ingredients:

Directions:

  1. Cook 3 cups fresh-cut corn in 1 cup boiling salted water for 2 to 3 minutes, or till just tender; or cook two 9-ounce packages frozen corn according to package directions; drain well.
  2. Combine corn, one 6-ounce can evaporated milk, 1 beaten egg, 2 tablespoons finely chopped onion, 1/2 teaspoon salt, dash pepper, and 3/4 cup shredded process Swiss cheese.
  3. Turn into 10x6x1 1/2-inch baking dish.
  4. Toss 1/2 cup soft bread crumbs with 1 tablespoon melted butter and 1/4 cup shredded Swiss cheese.
  5. Sprinkle over top.
  6. Bake at 350 degrees for 25 minutes.
  7. Serves 6.
