Sweet Potato Biscuits

Ingredients:

  • 1 1/4 cups flour
  • 1 tsp salt
  • 1 tbsp brown sugar
  • 2/3 cup milk

Directions:

  1. Preheat oven to 450 degrees.
  2. Sift flour, baking powder, and salt into bowl. Add sugar and stir to mix.
  3. In seperate bowl, combine the sweet potatoes with the milk and melted butter. Mix well until evenly blended.
  4. Stir the dry ingredients into the sweet potato mixture to make a dough. Turn onto a lightly floured surface and knead lightly just to mix, 1-2 minutes.
  5. Roll or pat out the dough to 1/2 inch thickness. Cut out into rounds with 1 1/2 inch cookie cutter.
  6. Arrange rounds on a greased cookie sheet. Bake until puffed and lightly golden, about 15 minutes.
  7. Serve the biscuits warm.
