Cauliflower Cheddar Fritters

Ingredients:

  • 1 cup flour
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 egg
  • 1/2 cup milk
  • 1/2 cup finely chopped onion

Directions:

  1. Make a smooth batter with first 7 ingredients.
  2. Mix in next 3 ingredients.
  3. For best results, refrigerate for an hour or so (but not necessary).
  4. Drop by spoonfulls into hot oil and deep fry til brown and crispy.
  5. Sprinkle with salt immediately upon removing from oil.
