Ingredients:

Directions:

  1. Preheat oven to 425 º.
  2. With sweet potatoes in a large bowl, add butter a little at a time untl well blended.
  3. Put flour, baking powder, salt, baking soda and cinnamon into a medium-sized bowl.
  4. Stir brown sugar through a strainer into flour mixture.
  5. Stir until blended.
  6. Stir flour mixture into sweet potato mixture in 3 additions alternatively with buttermilk, just until well blended.
  7. Form into a ball and sprinkle some flour on top.
  8. Roll dough to 1/2 inch to 3/4 inch thickness.
  9. Cut with a 2-inch round cutter.
  10. Bake on cookie sheet 15 to 20 minutes.
