King and Prince Oatmeal Raisin Muffins

Ingredients:

  • 1 1/4 cups rolled oats
  • 1 1/4 cups buttermilk
  • 2 eggs
  • 3/4 cup brown sugar
  • 1 cup flour
  • 1 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 cup raisins

Directions:

  1. Fill muffin tins with paper baking cups
  2. Combine oats and buttermilk in a bowl, let stand for 1 hour.
  3. Add eggs, sugar and butter, mix 30 seconds, scrape down bowl.
  4. Combine dry ingredients, add.
  5. Add raisins.
  6. Mix on low speed for about 15 seconds or only until dry ingredients are moistened.
  7. Fill muffin cups half full.
  8. Bake at 400 degrees for 15-20 minutes.
