Stewed Green Tomatoes

Ingredients:

  • 2 tbsp minced onion
  • 2 tbsp butter
  • 1/2 tsp salt
  • pinch of black pepper
  • 1/4 tsp paprika (i usually use a little more)
  • 1 tbsp of brown sugar -to temper the tart tomatoes

Directions:

  1. Saute onions in melted butter in sauce pan until light brown.
  2. Add the chopped green tomatoes.
  3. Stir and cook the tomatoes slowly until they are tender.
  4. Season with the remaining ingredients.
  5. Garnish with parsley.
  6. Good over rice or cheesy grits.
  7. Nice with a grilled meat or sausages.
