Green tomatoes don't always have to be fried. Stewed with curry and onions make them a great side dish for grilled meats. Really good with rice to sop up the juices. Ingredients:
2 tablespoons minced onion |
2 tablespoons butter |
2 cups sliced green tomatoes |
1/2 teaspoon salt |
pinch of black pepper |
1/4 teaspoon paprika (i usually use a little more) |
1 teaspoon curry powder |
1 tablespoon of brown sugar-to temper the tart tomatoes |
1 tablespoon chopped parsley(garnish) |
Directions:
1. Saute onions in melted butter in sauce pan until light brown. 2. Add the chopped green tomatoes. 3. Stir and cook the tomatoes slowly until they are tender. 4. Season with the remaining ingredients. 5. Garnish with parsley. 6. Good over rice or cheesy grits. 7. Nice with a grilled meat or sausages. |
