Spinach Impossible Pie

Ingredients:

  1. Preheat oven to 200C (180C fan forced.
  2. Lightly grease a 4 cup cpacity, 23cm (base measurement) pie dish and place on a baking tray.
  3. Wash spinach and pat dry with paper towel, roughly chop.
  4. Heat 1 teaspoon oil in a large deep grying pan over medium heat and add spinach and cook, stirring, for 2 minutes or until wilted and transfer to a plate and cool for 20 minutes.
  5. Heat remaining oil in pan over medium heat and add onion, cook for 1 minutes or until softened and then add garlic, cook stirring for 30 seconds or until fragrant and transfer to a bowl.
  6. Place spinach in a sieve and using the back of a large spoon, press liequid from spinach.
  7. Add spinach, dill, feta and tasty cheese to onion mixture and stir to combine and then spoon over base of prepared dish.
  8. Whisk eggs and flour together in a jug (mixture will be a little bit lumpy), gradually add milk, whisking to combine.
  9. Pour egg mixture over spinach mixture and bake for 30 to 35 minutes or until risen, lightly browned and set.
  10. Cut into wedges and serve with salad.
