Ingredients:

  1. Preheat oven to 350. Cut the tops off each garlic bulb, drizzle olive oil generously on the bulbs and sprinkle with salt. Wrap garlic in tin foil and bake in oven for 30-40 minutes. When cool, separate the roasted garlic cloves from their skins and set aside.
  2. After washing the quinoa and drying sufficiently, roast the quinoa in a large frying pan over medium heat stirring frequently until the kernels are a mild brown color (this helps bring out the nutty flavor of the quinoa).
  3. Bring 2 cups water to a boil, add quinoa, cover, and simmer over low heat until quinoa is cooked.
  4. Heat the 3 Tbsp. butter and 1Tbsp. Sambal Oelek chili paste in a frying pan. Add chopped mushrooms and diced onions and saute over medium heat for 10-15 minutes, or until the onions are barely carmelized.
  5. Chop apples into small cubes.
  6. In a large bowl, add the quinoa, apple cubes, raisins, sauted mushrooms & onions, whole roasted garlic cloves, and remaining Sambal Oelek and stir thoroughly. Add salt and pepper to taste, and more Sambal Oelek if you really like it spicy.
  7. Eat hot, or refrigerate overnight to have a cool yet hot healthy side or snack!
