Spiced Peach Jello Salad

Ingredients:

  • 1 (1 lb) can peach, sliced
  • 1/4 cup vinegar
  • 1/2 cup sugar
  • 12 whole cloves
  • 1/8 tsp cinnamon
  • 1 (3 oz) package peach jell-o
  • 3/4 cup water, cold

Directions:

  1. Drain peaches, measuring 3/4 cup syrup.
  2. Chop peaches coarsely.
  3. Bring syrup, vinegar, sugar and spices slowly to a boil.
  4. Add peaches, simmer for 10 minutes.
  5. Strain syrup and discard cloves.
  6. Add enough peach juice or water to make 1 cup.
  7. Dissolve Jello in hot syrup.
  8. Add cold water (if I have enough peach syrup, I use what I have) and peaches.
  9. Cool, then pour into mold.
  10. (The times I made this recipe, I have doubled it.)
