Ingredients:

Directions:

  1. Heat the oven to 160c/gas3. grease 2x1lb loaf tins & line the base of each with baing parchment.In a large bowl , mix the sugar oil & eggs, milk & vanilla, then the courgettes. Fold in the dry ingredients, followed by the nuts & raisins.
  2. Spoon the mix into the tins, level the tops. Bake for 1 hour 30 minutes until golden & well risen with a crisp crust.Leave to cool slightly.Turning out on a wire rack to cool.
  3. Serve warm & eat within 2 days.
