Spiced Courgette Fruit & Nut Loaf |

A easy cake ideal for using up your courgette glut. Make 2 1lb loaves. Ingredients:
500 g caster sugar |
250 ml corn oil |
3 eggs |
5 tablespoons milk |
1 teaspoon salt |
1 teaspoon vanilla extract |
500 g courgettes, grated |
750 g self raising flour |
1/2 teaspoon bicarbonate of soda |
1 teaspoon ground ginger |
1/2 teaspoon ground cloves |
200 g pecan nuts, chopped |
140 g raisins |
Directions:
1. Heat the oven to 160c/gas3. grease 2x1lb loaf tins & line the base of each with baing parchment.In a large bowl , mix the sugar oil & eggs, milk & vanilla, then the courgettes. Fold in the dry ingredients, followed by the nuts & raisins. 2. Spoon the mix into the tins, level the tops. Bake for 1 hour 30 minutes until golden & well risen with a crisp crust.Leave to cool slightly.Turning out on a wire rack to cool. 3. Serve warm & eat within 2 days. |
