Spiced Cider Muffins

Ingredients:

  • 1/2 tsp cinnamon
  • 1/2 cup raisins
  • 1/3 tsp salt
  • 1 large egg, beaten
  • topping
  • 1/4 cup sugar
  • 1 1/2 tsp cinnamon

Directions:

  1. Spray muffin pans with non-stick cooking spray.
  2. Preheat oven to 350 degrees F.
  3. Combine flour, baking powder and saltin a bowl.
  4. Mix well.
  5. Add raisins and toss to coat.
  6. Combine cider, butter and egg.
  7. Mix well.
  8. Combine wet and dry ingredients until just blended.
  9. Spoon batter into pans.
  10. TOPPING:
  11. Combine sugar and cinnamon.
  12. Mix well.
  13. Sprinkle over muffins.
  14. Bake for 20 to 25 minutes.
