Spaghetti with Carrot and Tomatoe Sauce

Ingredients:

  • 225 g spaghetti
  • 1 large onion
  • 1 tbsp butter
  • 2 tbsp tomato puree
  • 400 g carrots , about 4
  • 1 tsp oregano , to taste
  • 1/10 liter water
  • 1/10 liter creme fraiche
  • 1 tsp salt
  • 1 tbsp parsley , to taste

Directions:

  1. Peel and chop onion and fry in saucepan.
  2. Add tomatoes, tomato puree and bullion dice. Boil on low heat while peeling the carrots.
  3. Heat spaghetti cooking water.
  4. Grate carrots coarsely and add to saucepan along with oregano and water. Let simmer under lid for 15 minutes.
  5. Add spaghetti to boiling water and cook according to instructions.
  6. Add creme fraiche, sour cream(?), and taste with salt, pepper and oregano.
  7. Add parsley on top of the sauce at serving.
  8. If you want to you can use a mixer on this sauce.
