South African Malva Pudding

Ingredients:

  • 1 egg
  • 250 g sugar
  • 250 g flour
  • 1 pinch of salt
  • 1 tbsp butter
  • 1 tsp of vinegar
  • 250 ml milk
  • sauce for malva pudding
  • 225 ml milk
  • 225 ml double cream
  • 25 g butter
  • 1 tsp of vanilla essence

Directions:

  1. For the base, beat the egg and sugar together well and beat in the apricot jam.
  2. In a separate bowl, sift the flour together with the bicarbonate of soda and salt.
  3. In another dish, melt the butter and add the vinegar and the milk.
  4. Add the liquids (butter and vinegar and milk) to the egg mixture (the base) with the flour.
  5. Beat well and bake in a greased pie dish at 180C for 1/2 to 3/4 hour.
  6. For the Sauce:
  7. Melt together all the ingredients for the sauce and
  8. Then pour over the Malva pudding as soon as it comes out of the oven.
  9. You can prick the pudding with a toothpick so that the sauce permeates the whole pudding.
  10. Serve the Malva pudding hot in a bowl or on a plate with cream drizzled around.
