Simple Potato Pancakes(Latkes)

Ingredients:

  • 1 small onion, grated
  • 1 large egg
  • 2 tbsp flour
  • 1/2 tsp baking powder

Directions:

  1. Heat OIL IN HEAVY IRON SKILLET; just enough to cover the bottom of the pan.
  2. Remove excess moisture from potatoes by squeezing in a kitchen towel.
  3. Add grated onion to large bowl.
  4. Add flour, potaoes(grated), salt, egg, and baking powder.
  5. Stir well untill combine in bowl.
  6. Drop by small handsful into skillet and flatten slightly.
  7. Cook 4-5 minutes on each side till golden brown.
  8. Drain pancakes on paper towels to rid of excess grease.
  9. Serve with your favorite sides.
