Ingredients:

  • 3 tbsp butter
  • 1 small onion
  • 1 1/2 tsp curry powder
  • 1/4 cup flour
  • 1/2 tsp salt
  • 1 cup milk
  • 1/2 cup chicken broth
  • 1/8 tsp ginger powder
  • 3/4 tsp sugar
  • 3 cups cooked rice
  • 1/2 cup golden raisin

Directions:

  1. - chop the onion;.
  2. - melt butter over medium heat.
  3. - add onions and cook until tender.
  4. - stir in curry powder and cook for about 1 minute.
  5. - stir in flour, ginger, sugar and salt.
  6. - gradually add in milk and chicken broth, simmer/stir until the sauce gets thicker.
  7. - stir in shrimp and lemon juice and simmer until everything is heated.
  8. - pour over the cooked rice and sprinkle the top with the peanuts and raisins.
