This recipe comes from a Good Housekeeping recipe book although I have tweaked it somewhat - to feed fewer people. Ingredients:
1 lb shrimp, shelled |
3 tablespoons butter |
1 small onion |
1 1/2 teaspoons curry powder |
1/4 cup flour |
1/2 teaspoon salt |
1 cup milk |
1/2 cup chicken broth |
1/8 teaspoon ginger powder |
1 teaspoon lemon juice |
3/4 teaspoon sugar |
3 cups cooked rice |
1/2 cup salted peanuts |
1/2 cup golden raisin |
Directions:
1. - chop the onion;. 2. - melt butter over medium heat. 3. - add onions and cook until tender. 4. - stir in curry powder and cook for about 1 minute. 5. - stir in flour, ginger, sugar and salt. 6. - gradually add in milk and chicken broth, simmer/stir until the sauce gets thicker. 7. - stir in shrimp and lemon juice and simmer until everything is heated. 8. - pour over the cooked rice and sprinkle the top with the peanuts and raisins. |
