Savory Stuffed French Toast

Ingredients:

  1. For Honey Mustard Chive Sauce
  2. Combine all ingredients well an set aside
  3. For Stuffed French Toast
  4. In shallow pan(a pie plate works well!), combine eggs, milk 1t of tarragon and a lil salt and pepper.
  5. Whisk well to break and beat eggs to a frothy consistency
  6. In medium, heavy skillet or frying pan, heat a couple T of butter and saute the mushrooms for about 5 minutes with the remaining tarragon and a lil more salt and pepper. This will release a lil of the liquid as well as giving them a lil head start on the heating/cooking process. If you are using a scallion, cook that, here, with the mushrooms!
  7. Add chives and toss well off of the heat.
  8. Make sammiches by adding cheese to 6 pieces of the bread, distributing both types of cheese evenly.
  9. With a slotted spoon, add a spoonful of the mushroom mixture to each layer of cheese.
  10. Top with another piece of bread.
  11. Carefully place each sandwich in the egg mixture, turn and coat both sides.
  12. Immediately place in a hot skillet with melted butter and cook, turning once, until nicely cooked and lightly golden brown.
  13. Serve with the sauce, if desired
