  1. Put rack in the center of the oven. Heat oven to 300 degrees. Grate the rind from the lemon into a small glass bowl. Juice the lemon through a strainer into the bowl. Set aside.
  2. Butter and flour a 9-inch cake pan. Separate the eggs, putting the whites in a clean glass, stainless-steel or copper bowl and the yolks in a large mixing bowl.
  3. Beat the yolks until they are fluffy and light. Gradually beat in the sugar. Then beat in the lemon rind and juice.
  4. Whisk the egg whites until they are stiff but still glossy, preferably by hand. Fold them into the yolk mixture. Sift or whisk the flour until it is very light and free of lumps, then fold a little at a time into the egg mixture by sifting it over the top.
  5. Pour the batter into the prepared pan and bake in the center of the oven until golden and set, when a toothpick inserted in the center comes out clean, about 45 minutes.
  6. Cool the cake in the pan for 5 minutes, then run a knife around the sides to loosen. Turn out on a wire rack to cool. When cool, dust with powdered sugar and serve with Sweet Madeira Sauce, garnished with sliced strawberries if desired.
