Sauteed Spinach and Portabella Mushrooms

Ingredients:

Directions:

  1. Wash and stem spinach and mushrooms.
  2. Slice mushrooms including stems.
  3. Mince garlic (smash each clove before mincing for optimal flavor).
  4. Heat pan with olive oil; add garlic and saute one minute; add mushrooms and saute for a few minutes.
  5. Add spinach in batches, so pan doesn't get too crowded (spinach will quickly wilt).
  6. Add salt and pepper to taste.
  7. Add parsley.
  8. Add white wine and stir ingredients one final time.
  9. Serve hot.
