Ingredients:

Directions:

  1. Clean and peel the carrots leaving the green leafy tops.
  2. Par boil the carrots for 5 minutes.
  3. In a small frying pan sauté onions in the oil and butter for 2 minutes.
  4. Add carrots and sauté another 2 minutes.
  5. Sprinkle with brown sugar and cook another minute.
  6. Plate and sprinkle with chopped parsley.
