Roasted Sweet Potatoes And Beets

Ingredients:

  • 3 medium-large beets, peeled
  • 2 tsp. olive oil
  • 1 tsp. sea salt
  • 1/4 tsp. pepper

Directions:

  1. Pre-set oven to 350.
  2. After peeling sweet potato & beets, cut up into large bite sized pieces.
  3. Place on shallow roasting pan & toss in olive oil, salt & pepper until evenly coated.
  4. Place in oven, uncovered, and roast for 35-45 min. Until Sweet potatoes are fork tender. Add additional salt & pepper to taste if desired.
  5. Recipe can easily be doubled, just be sure to adjust time.
