Roasted Sweet Potatoes And Beets |

I never thought I would enjoy fresh beets so much. We can get all the ingredients at the local farmer's market. My kids love it! Ingredients:
1 large sweet potato, peeled |
3 med-large beets, peeled |
2 t. olive oil |
1 tsp. sea salt |
1/4 tsp. pepper |
Directions:
1. Pre-set oven to 350. 2. After peeling sweet potato & beets, cut up into large bite sized pieces. 3. Place on shallow roasting pan & toss in olive oil, salt & pepper until evenly coated. 4. Place in oven, uncovered, and roast for 35-45 min. Until Sweet potatoes are fork tender. Add additional salt & pepper to taste if desired. 5. Recipe can easily be doubled, just be sure to adjust time. |
