Ingredients:

  • 1 cup flour
  • 1/2 cup rolled oats
  • 1/2 cup butter
  • 4 cups rhubarb
  • 1 cup sugar
  • 1/2 cup flour
  • 1/2 tsp cinnamon

Directions:

  1. Preheat oven to 375 degrees
  2. Make topping: combine flour, oats, brown sugar, mixing well. with fork stir in melted butter to make a crumbly mixture.
  3. Make rhubarb filling: in 8x8x2 inch baking dish, combine rhubarb (cut into 1/2 inch peices) with sugar, flour, cinnamon and 1/2 cup water, stir to mix well.
  4. Sprinkle topping evenly over filling; bake, uncovered, 35 minutes or until topping is golden brown and rhubarb is tender.
  5. Serve warm, with light cream or ice cream, if desired.
