cut up rhubarb with crumbly oatmeal topping baked
Ingredients:
1 cup flour
1/2 cup rolled oats
1 cup brown sugar
1/2 cup butter
4 cups rhubarb
1 cup sugar
1/2 cup flour
1/2 tsp cinnamon
Directions:
1. preheat oven to 375 degrees
2. make topping: combine flour, oats, brown sugar, mixing well. with fork stir in melted butter to make a crumbly mixture.
3. make rhubarb filling: in 8x8x2 inch baking dish, combine rhubarb (cut into 1/2 inch peices) with sugar, flour, cinnamon and 1/2 cup water, stir to mix well.
4. sprinkle topping evenly over filling; bake, uncovered, 35 minutes or until topping is golden brown and rhubarb is tender.
5. serve warm, with light cream or ice cream, if desired.
