Ingredients:

  • 1 cup flour
  • 3/4 cup uncooked oats
  • 1 cup brown sugar (firmly packed)
  • 1/2 cup melted butter
  • 4 cups rhubarb
  • 1 cup sugar
  • 2 tbsp cornstarch
  • 1 cup water
  • 1 tsp vanilla

Directions:

  1. Preheat over to 350 degrees.
  2. Mix the flour, uncooked oats, brown sugar and melted butter until crumbly. Press half of the crumbs into a greased 9x13 baking dish. Clean and dice rhubarb and put on top of oat mixture. Cook the sugar, corn starch, water and vanilla until clear. Pour over rhubarb, bake until thoroughly cooked (about 45 minutes).
