Potato Lentil Stew

Ingredients:

  • 2 large potatoes
  • 3 cups water
  • 1/2 cup diced tomato
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp curry
  • 1/2 tsp turmeric
  • 1/4 tsp paprika
  • 1/4 tsp cinnamon

Directions:

  1. Cut potatoes into pieces that are about 1 square.
  2. Rinse lentils.
  3. Combine potatoes, red lentils, tomatoes, water, and spices in a pan.
  4. Cover and let simmer until all of the water is absorbed. Stir occasionally.
