Ingredients:

  • 1 cup oil
  • 2 cups flour
  • 3 eggs
  • 2 cups sugar
  • 2 tsp cinnamon
  • 2 tsp vanilla
  • 2 (3 1/2 oz) jars carrots (2nd stage baby food)
  • 1 (6 1/2 oz) can pineapple, crushed
  • 1 cup coconut

Directions:

  1. Preheat oven to 350 degree.
  2. Combine all ingredients in a large mixing bowl and mix well by hand (do not use electric mixer).
  3. Pour into greased 9x13 pan.
  4. Bake 40-50 minutes or until set.
  5. Serve with whipped cream.
