Ingredients:

  • 1 cup cold mashed potatoes ( use left-over mashed potatoes or mash hot boiled. add cream , butter , salt as you normally would.
  • 1 cup flour
  • 1/4 tsp salt

Directions:

  1. Mix all ingred. together and shape dough into balls a little larger than a walnut.Roll out dough on a floured board til thin.
  2. Brown on a dry skillet, not too hot, then turn over and brown on other side.
  3. Put on plate, brush with melted butter, stack on a pile until done.
  4. Roll up and enjoy. Jelly can be used over butter also. I remember them looking like big brown spots on the pancake???
