Pineapple-Sesame Chicken

Ingredients:

Directions:

  1. Cut chicken into bitesize chucks.
  2. Drain pineapple, reserving juice.
  3. Melt butter in large skillet over medium heat; add chicken.
  4. Saute until browned, about 5 minutes.
  5. Add pineapple, sesame seeds, corn syrup, soy sauce, lemon juice, ginger and salt; mix well.
  6. Dissolve cornstarch in reserved pineapple juice in a glass measure.
  7. Add enough water to equal 2 cups; pour over chicken mixture.
  8. Simmer mixture over low heat, stirring occasionally, until sauce is thickened and chicken is cooked through, about 20 minutes.
  9. Serve over rice.
  10. Garnish with pineapple rings and parsley.
