Ingredients:

  • 3 oz (90 g) flour
  • 4 tsp sugar
  • 1/2 tsp (2.5ml) baking powder
  • 4 oz (120g) low-fat dry milk
  • 1 can 227g , drained, crushed pineapple , plus 4 tbsp )60mi) juice
  • 2 tbsp (30ml) water
  • 1/2 tsp (2.5ml) vanilla extract
  • 4 tsp (20ml) desiccated coconut

Directions:

  1. Preheat oven 180c / gas 4
  2. Sift together the first 3 ingredients
  3. Add remaining ingredients except for the coconut and mix well
  4. Drop teaspoonsful of the mixture on to a none-stick baking sheet, allowing room for the biscuits to spread
  5. Sprinkle biscuits with the coconut
  6. Bake for 15 Min's or until lightly browned.
  7. Cool on wire rack.
