Pig's  Grilled Eggplant

Ingredients:

Directions:

  1. Cut the ends off of the eggplant and discard.
  2. Peel the onion.
  3. Slice eggplant into 1/2 inch thick rings.
  4. Slice onion into 1/2 inch rhick rings.
  5. Sprinkle garlic salt and pepper on the eggplant.
  6. Cover the eggplant and onion with italian dressing.
  7. On medium coals - place the eggplant and gtill 5 minutes.
  8. Flip and place onion ring on each slice of eggplant.
  9. Grill 5 more minutes - sprinkle tops with cheese and cook 5 minutes more
  10. ENJOY!
