Pesto Steak With Croutons And Coleslaw

Directions:

  1. Prepare grill or heat broiler.
  2. Cut 1 pound small red skin potatoes in half.
  3. Cook in boiling salted water 5 to 7 minutes, until partially cooked; drain.
  4. With knife, score both sides of two 1-1/2-pound top round steaks. Spread 2 tablespoons pesto on each side of both steaks (total 1/2 cup).
  5. Grill or broil potatoes until golden, 3 to 5 minutes.
  6. Grill or broil steaks 7 minutes each side for medium-rare. slice 1 steak.
  7. Serve with croutons and coleslaw (recipes follow).
  8. CROUTONS
  9. Combine 2 tablespoons softened butter and 2 tablespoons prepared pesto in small bowl.
  10. Cut 1 pound 2 ounce loaf white bread into 12 slices.
  11. Spread with butter mixture.
  12. Grill or grill, butter-side up, until golden, 3 to 4 minutes. Makes 6 servings.
  13. PESTO COLESLAW
  14. Combine 1 cup sour cream, 1 tablespoon white-wine vinegar, 1/4 cup pesto, 1 teaspoon salt and 1/2 teaspoon pepper in large bowl. Add 1-pound package coleslaw mix; toss. Makes 6 servings.
